A Veggie-Nut Burger to Go NUTS Over!

Recently, I went to Ransom Pub on King Street for the first time. When I was looking over the menu I noticed how delicious their Veggie Nut Burger sounded. According to Ransom’s menu, their Veggie Nut Burger is a “custom blend of almonds, sunflower seeds, cashews, quinoa, bread crumbs, and spices, topped with monterey jack cheese, pickled veggies & garlic aioli on a warm brioche bun.”

When I go out to eat, I try to eat meatless for numerous reasons. If you’re looking for a new vegetarian meal to eat out, Ransom has you covered. However if you’re looking for a new vegetarian meal to make in the comfort of your kitchen, this post has you covered!

Today I am going to be sharing my attempt at creating Ransom’s Veggie Nut Burger. For those who know me personally, it's no secret that I am no chef in the kitchen. I found this great YouTube video from Karen Knowler: The Raw Food Coach. After following along with her as she walks through the video and tasting the results myself, this recipe is great! I have tweaked her recipe slightly, and I encourage you to do so as needed, because I prefer different nuts. But Knowler provides the perfect instructions and portions to perfecting this recipe



Required Ingredients:


1 cup of Almonds.

½ cup of Cashews.

½ cup of Sunflower Seeds.

¼ cup of Lemon Juice.

1 teaspoon of Salt (preferably not table salt).

1 handful of Parsley.

2 large Carrots.

½ of a Red Onion.

1 Food Processor.


Start by preheating your oven to 375 degrees. Oil a baking sheet.


Place all ingredients in the food processor after they have been cut and washed as needed. You may need to add a splash of water more to get the desired consistency. Blend and continue to push the ingredients down towards the blades. The finer the consistency the better.


Knowler uses different tools to create her patties, but any cookie cutter will work just fine! You can also just mold them in the way you would mold beef patties as well. I personally like to just use my hands and minimize the dishes I use and future water waste. A ⅓ measuring cup will also create a great patty if you’re in need of precise instructions like I find myself needing.


Line baking sheet with patties and place into the oven for twenty minutes, flipping the patties at the ten minute mark. After twenty minutes have passed, finish your patty with condiments, toppings, and a bun.


This is such a simple, fast and easy way to make dinner with ingredients most people own.
